  1. After peeling the cucumber, grate it coarsely then place it in a colander so as to drain the vegetation water
  2. After an hour, take the grated cucumber and mash it with the back of the spoon to remove the last traces of water and create a cream
  3. Cut the garlic cloves thinly, pour them into a bowl and mash them until they become a cream: if you prefer, you can pass them through the mixer
  4. At this point add the Greek yogurt, cucumbers and mix until the three ingredients are combined
  5. Once this is done, add the oil, vinegar, chopped dill and season with salt, mixing everything with a whisk.

As an alternative to Greek yogurt you can use low-fat natural yogurt; just let out all the excess buttermilk; the dill can be replaced with other aromatic herbs (parsley, mint) according to one's taste and the sauce can finally be served decorated with black olives. The tzatziki sauce should be stored in the refrigerator for 3-4 days covered with a thin layer of oil in an airtight container or covered with a sheet of cling film.

Ingredients

  • 1 large cucumber
  • 500 grams of natural low-fat yogurt
  • 2 tablespoons of chopped mint

Preparation

  2. Peel the cucumber, chop it finely then pour it into the bowl together with the yogurt and add the chopped mint.
