In fact, from the point of view of nutritional properties, broccoli is rich in vitamin C, polyphenols, magnesium, phosphorus and iron and they are also a source of dietary fiber, very useful for the sense of satiety.

Pay attention to the price: cheap dish! Broccoli is an autumn-winter vegetable: they are available from November until the end of February. I paid for two stalks of broccoli about 1 euro; organic eggs, about 3 euros per pack of six.

Broccoli omelette, the ingredients

  • 2 stalks of broccoli
  • 6 Fresh organic eggs
  • Salt and pepper q. b.
  • Olive oil q. b.
  • A sprinkle of grated cheese

Broccoli omelette, the preparation

  1. After carefully cleaning the broccoli, cut the florets and the stem into small pieces
  2. Place them in a pot and steam them for 5 minutes: the time gets longer if you cut them into large pieces
  3. When cooked, drain the broccoli and set aside
  4. In a very large bowl, beat the eggs and add a pinch of pepper, salt and a good handful of grated cheese
  5. At this point add the broccoli and mix well until everything is mixed well
  6. Pour the mixture into a pan and bake in a preheated oven at a temperature of 200 degrees for about 15 minutes, often checking its cooking
  7. Serve the broccoli omelette by placing a few fresh lettuce leaves and a drizzle of raw olive oil on top.

If not consumed immediately, keep in the fridge for a maximum of 2 days.

An advice? If you prefer a lower cholesterol content, use 2 yolks and 4 egg whites. The color of the omelette will be a little pale but the fats will be halved!
