Velvety and red lentil soup

Red Lentil Soup

The origins of the recipe ofRed Lentil Soupthey appear to be Egyptian but many industry bloggers claim that it is a Turkish recipe. We don't know where the recipe was born, what we can tell you is that the addition of cumin and turmeric gives the cream a more intense and decidedly particular flavor. Ingredients for four people:

  • 1 finely chopped onion
  • 1 tablespoon of cumin seeds
  • 2 tablespoons of olive oil (the original recipe requires the use of ghee, typical Egyptian fat)
  • 1 clove of garlic
  • 200 grams of red lentils
  • 1 chopped carrot
  • 100 grams of tomato pulp
  • 1 bay leaf
  • 1 teaspoon of turmeric
  • 600 ml of water or broth
  • salt and pepper as required
  • 1 dry hot pepper

Preparation:

  1. Over moderate heat, sauté the onion with the cumin. When the onion has wilted (but not colored!), Add the grated garlic and mix.
  2. Add thered lentilsand the chopped carrot. Stir and cook for 2-3 minutes.
  3. Add the tomato pulp, turmeric and bay leaf. Sauté for another 5 minutes while continuing to stir.
  4. Add the salted water (those who prefer a tastier result can use the broth) and cover the pot. Cook for 15-20 minutes, until thelentilsthey will not be well cooked.
  5. When cooked, to obtain onevelvetylight, put it all in a mixer and turn it on.

Red Lentil Soup

The preparation of aRed Lentil Soup Italian style is just as simple. To make thelentil soupmoretastyit is advisable to add spices such as curry and ground coriander to the ingredients. Here are the ingredients for four people:

  • 150 grams of red lentils
  • a carrot
  • a stick of celery
  • an onion
  • 2 medium potatoes
  • a level teaspoon of curry
  • a pinch of ground coriander
  • 1 liter of vegetable broth
  • 2 tablespoons of extra virgin olive oil
  • salt and pepper as required

Method:

  1. Cut carrot, celery, onion and diced potatoes.
  2. In a pan, heat the oil to slightly wilt the carrot, potatoes, celery and onion. Stir often.
  3. Add the lentils, broth, coriander, curry powder and a pinch of salt (only if the broth was not already salty).
  4. Over moderate heat, bring thelentil soupto a boil and continue cooking for about 25 minutes, until the lentils are well cooked.
