The vegetable nut can be made at home without any difficulty, both in standard version (frozen vegetable nut) and in granular version (vegetable nut powder). Let's see, step by step, how to proceed to make the nut at home. The only recommendation is to use only vegetables that come from organic farming.

Homemade vegetable cube to freeze

Here are the ingredients for the first version of ourshomemade vegetable nut.

  • 250 grams of celery
  • 3 carrots
  • 1 large onion
  • 1 courgette
  • 100 grams of parsley
  • A handful of basil leaves
  • 2 sprigs of rosemary
  • A handful of sage leaves
  • 150 grams of salt
  • 1 tablespoon of extra virgin olive oil

Homemade vegetable cube, the preparation

  1. Wash all the vegetables and aromatic herbs well under running water then chop them finely
  2. Once this is done, transfer everything into a steel pot then add the oil and salt
  3. Cover the pot with an airtight lid
  4. Cook them for at least 1 hour and a half without adding water over low heat
  5. After the time has elapsed, transfer the mixture into the minipinner and blend until the mixture becomes homogeneous
  6. Put the freshly blended mixture back on the heat and cook until it has thickened again.

Frozen vegetable nut

Transfer the freshly prepared vegetable cube into the classic ice molds and place it in the freezer. Defrost if necessary and add it to the dishes to be flavored.

Homemade granular nut

Ingredients and procedure are the same as for the previous recipe. Instead of proceeding with the freezing of the vegetables, it will be necessary to provide for dehydration. How? In the oven.

  • Cover the dripping pan with a silicone sheet.
  • Arrange the vegetable smoothie on the lined baking sheet.
  • Let the oven dry at low temperatures, stirring.
  • When it is completely dry, transfer to the mixer and blend for one last time.

As an alternative to the conventional oven, you can dry the mixture in the microwave. Set the power to 800 watts for 5 minutes.
