  1. Melt soy butter in a saucepan over low heat.
  2. Add the flour, stirring well to prevent lumps from forming.
  3. Turn off the heat then add the soy milk a little at a time and finally a pinch of whole salt and nutmeg.
  4. Continue to mix until everything is mixed and you get the consistency that best suits you, it is preferable to use a whisk for this operation.
  5. Pour the béchamel just obtained into a very large bowl and set aside.
