To consume vegetables fresh in season, it brings a number of benefits to both health and the environment. Unfortunately the vegetables they are not eaten with much pleasure especially by children. The secret is to guess how to prepare a vegetable-based dish, which can satisfy everyone. There vegetable omelette is the right solution for those who love delicious, fresh and genuine foods. The goodness and genuineness of the vegetable omelette can be guaranteed by the origin of the foods contained therein: vegetables they must be fresh, organically grown and the same goes for eggs.

Vegetable omelette, the ingredients for 4 people
3 organic eggs
1 red pepper
2 courgettes
a bunch of asparagus
150 grams of cottage cheese
3 tablespoons of bechamel
a handful of raisins
a handful of pine nuts
a leek
a spoonful of flour
a knob of butter
olive oil

Vegetable omelette, the preparation

  1. Wash, clean and cut the pepper into small pieces
  2. Wash the zucchini well, cut into small pieces then do the same for the asparagus
  3. Pour the peppers into a low heat ceramic pot with a drizzle of oil and a spoonful of water, stirring occasionally
  4. After 5 minutes, add the zucchini, asparagus, raisins, pine nuts and finely chopped leek, a little salt with the peppers and mix
  5. Leave on the fire for 5 minutes, stirring occasionally
  6. Transfer the contents into a large bowl
  7. In another bowl, beat the eggs and add a little pepper
  8. Pour the beaten eggs into the other bowl containing the browned and mixed vegetables
  9. Add the béchamel, ricotta, flour and mix until a homogeneous mixture is obtained

Vegetable omelette, cooking
Once the mixture is ready to make the vegetable omelette we can decide whether to cook it on the stove or in the oven.
For cooking on the stove:

  1. Put the knob of butter in a pan and after a few seconds pour the mixture
  2. Let it cook for about 5 minutes then turn the other side with the help of a lid
  3. Cook for another 3 minutes then pour the vegetable omelette on absorbent paper

For baking:

  1. Put the mixture in a pan then have it greased well
  2. Put in the oven and cook at 160 degrees for 20 minutes

Serve the vegetable omelette lukewarm or cold
