Proteins
Amaranth contains an essential amino acid lacking in other cereals, lysine. It is a vital substance for the absorption and fixation of calcium in the bones. Lysine is also one of the two amino acids that make up keratin (lysine and cysteine), a fundamental protein for health and hair growth.
Fibers
Amaranth also contains a fair amount of fiber, a fundamental nutrient for fighting intestinal problems; in fact, they help prevent constipation thanks to the increase in fecal mass and the decrease in intestinal transit.
The constant intake of amaranth can help in weight control: since the fibers increase the mass of food ingested without adding calories, it has a satiety and decreased appetite effect
Mineral salts

How to take amaranth
Amaranth grains are generally boiled but as they tend to aggregate in the form of a gelatinous mass, it can be unwelcome. To avoid this we can cook it together with other cereals (for example barley or rice), to the extent of 15-20%. The amaranth should be boiled for 30 minutes in a quantity of water equal to 3 times that of the beans
Another widespread cooking method is that of roasting the beans; just pour a drizzle of oil into a non-stick pan and let it heat then add the amaranth grains, cover with a lid, and wait for the toasting to take place in the same way as popcorn.

Amaranth oil
Amaranth oil, which is obtained by pressing the grains, contains a high amount of linolenic acid, an omega-3 fatty acid essential for our body.
