Zucchini meatballs, vegan recipe



Zucchini, a purely summer vegetable, is a true concentrate of well-being due to its nutritional and beneficial properties. For this reason, it should never be lacking in the kitchen, but not only! It is also a very versatile vegetable: in fact we find it in pasta, in fish or meat dishes, in side dishes, as a container for fillings ... ... but it can represent a single dish as in the case of zucchini meatballs. The recipe that we will offer you today is precisely the Aubergine Meatballs, an easy and very quick dish to prepare. The recipe for zucchini meatballs that we want to offer today does not include ingredients of animal origin, therefore a dish suitable for those who follow a vegan lifestyle.

Courgette meatballs, what we need

  • 800 grams of hard-boiled zucchini
  • 2 medium potatoes
  • 1 pack of soy cream
  • 1 tablespoon of yeast flakes
  • A handful of pine nuts
  • A handful of raisins
  • A handful of sesame seeds
  • Bread crumbs
  • Oil, salt and pepper

Courgette meatballs, the preparation

  1. After washing the zucchini, cut their ends and grate them coarsely
  2. Squeeze them a little with your hands to remove the water and place them on a tea towel for a few minutes
  3. Clean the potatoes then put them to boil
  4. Once the potatoes are cooked, mash them in the vegetable mash then pour the cream obtained into a bowl
  5. Add the grated zucchini, soy cream, yeast flakes, pine nuts, raisins, pepper and a handful of salt
  6. Mix all the ingredients well until they are well combined
  7. In a dish pour the breadcrumbs together with the sesame seeds
  8. Take the dough and form some ping pong balls
  9. Put them in the breadcrumbs then place the zucchini meatballs in a high pot filled with hot oil and fry: the meatballs must be entirely covered with oil
  10. After a few minutes remove the meatballs with the help of a skimmer and place them on absorbent paper
  11. Serve still hot

Cooking variant: to make zucchini meatballs lighter and more digestible, you can cook them in the oven. For the procedure, just grease a pan and lay them inside. Put in a preheated oven at 180 degrees for 35 minutes
