How to cook chickpeas, soups and focaccias



In the previous article we suggested how to make the chickpea cream; we will talk more about chickpeas to suggest other ideas on how to cook chickpeas. In this regard, here are two healthy, ethical and dietetic recipes: soup with chickpeas and Pisan focaccia with chickpeas.

How to cook chickpeas, soups
With chickpeas we can make excellent soups. The Genoese version includes the addition of 50 grams of mushrooms for every 350 grams of chickpeas, while a less traditional version combines chickpeas with chestnuts. Here are the ingredients for 4 people:

  • 200 grams of chickpeas
  • 150 grams of chestnuts
  • 4 ripe tomatoes, diced
  • 1 clove of minced garlic
  • 1 liter of vegetable broth rich in carrots and celery
  • Rosemary
  • Chili pepper
  • Bread
  • Extra virgin olive oil
  • salt

Preparation

  1. Rinse the chickpeas and soak them for at least 12 hours before cooking
  2. Cook the chestnuts for about 20 minutes in boiling water then peel and peel them
  3. In a saucepan, fry the minced garlic with rosemary and chilli: when the garlic is golden, add the tomatoes and mix quickly
  4. Add the chickpeas and chestnuts, cover them with broth and add the salt
  5. Cook everything for about 2 hours

Serve the chickpea and chestnut soup with a drizzle of extra virgin olive oil and accompany it with slices of toast or savory croutons.

How to cook chickpeas, the focaccia
The chickpeas can be used in the form of flour for the preparation of delicious focaccia, an example are the Pisan focaccia with chickpeas, here are the ingredients for 4 people:

  • 200 grams of chickpea flour
  • 400 ml of water
  • Extra virgin olive oil
  • Salt and pepper

Preparation:

  1. Prepare a batter by combining the water and flour, taking care that lumps do not form: do not be surprised if the mixture is very fluid, it is normal
  2. Add a pinch of salt and pepper
  3. Let the freshly prepared mixture rest for a few hours: if foam has formed on the surface, remove it with a spoon
  4. Grease a baking sheet and spread the mixture evenly
  5. Bake in the oven for 15-20 minutes at 200 degrees making sure it does not burn

Before the mixture has completely solidified, you can add a few grains of coarse salt or chopped rosemary to the surface to add color.
