In the previous article we suggested the recipe for zucchini meatballs, today's recipe is zucchini rolls; they are ideal for summer dinners with friends but are also very suitable for trips out of town as they can also be enjoyed cold. Here how to make zucchini rolls, following our step by step recipe.
How to make zucchini rolls, what we need
- 5 medium organic courgettes
- 2 carrots
- 1 bell pepper
- 1o0 grams of ricotta
- 100 grams of raw ham
- A handful of rocket
- A handful of raisins
- A handful of pine nuts
- A glass of white wine
- 1 pack of bechamel
- Olive oil
- Nut of butter
- salt
- pepper
How to make zucchini rolls, the preparation
- Wash the courgettes well and cut them lengthwise
- Put the courgettes to cook on a grill for a few minutes, grilling both sides
- Wash the pepper well and cut it into small pieces
- Peel the carrots and grate them
- Take a non-stick pan and pour the pieces of peppers and grated carrots into it
- Brown the vegetables for at least 10 minutes, stirring often with a wooden spoon
- Add the glass of wine and season with salt
- Cook on the stove for at least another 10 minutes, turning often to prevent the food from sticking
- Make sure that the wine has all evaporated then pour everything into a bowl
- Add the ricotta, 6 tablespoons of bechamel, raisins, pine nuts, pepper
- Turn well until you get an amalgamated mixture
- Take the courgettes, lay a slice of ham lengthwise and pour the mixture along with the help of a spoon
- Roll up the courgettes and stop them with a toothpick
- Grease a pan and place the courgette rolls on it
- Put in a preheated oven and cook for 10 minutes at a temperature of 165 degrees
- Remove from the oven and serve on a serving dish garnished with rocket
