How to make ravioli with vegetable filling



Ravioli are a type of filled pasta that can also be prepared at home. For the preparation of ravioli no particular culinary skills are required, in this regard here how to make ravioli at home following our step by step recipe.

  • Half a kilo of flour
  • 8 egg yolks

  • 200 grams of champignon mushrooms
  • 2 courgettes
  • 1 bell pepper
  • 1 leek
  • 150 grams of cottage cheese
  • 1 pack of bechamel
  • Olive oil

How to make ravioli, the stuffing

  1. Take the zucchini, wash them well and cut them into small pieces, then do the same thing with the pepper
  2. Pour the vegetables into a non-stick pan with a drizzle of oil along with the finely chopped leek and mushrooms
  3. Let it cook for at least 20 minutes
  4. After this time, put everything in a bowl and add the b├ęchamel and ricotta
  5. Mix well until you get a homogeneous mixture, to be used as a filling for ravioli

How to make ravioli, the pastry

  1. Make a well in the flour and add the egg yolks
  2. Work the dough well until you get a compact dough: better if you have a mixer
  3. Cut it into pieces then roll it out with a rolling pin, until the pastry reaches a thickness of about 3 millimeters
  4. Place the pastry on the table, take the vegetable filling and make lots of small, identical balls to be placed in a row with the same distance from each other
  5. Brush the pastry with egg white, which will serve as a glue
  6. Close the dough and make the moist parts fit together.
  7. Cut the row discarding the excess pasta then cut the ravioli one by one

To cook ravioli

  1. Cook the ravioli in a pot with salted water for just five minutes: fresh pasta has a very short cooking time
  2. Drain the ravioli, transfer them to a non-stick pan and add the butter and sage
  3. Blow up for a couple of minutes
