Vegetable puffs, the recipe



Now summer is upon us and with the increase in temperature the fields are filled with lots of good vegetables: this is the case of aubergines, courgettes, peppers, tomatoes ... ... in short, there is only the embarrassment of choice! Vegetables lend themselves to many preparations in the kitchen, from appetizers to main courses such as stuffed zucchini, but they can be the main ingredient of excellent first courses. In this regard we propose the recipe of vegetable puffs, a dish that can be served both as an appetizer and as a main course. The only recommendation is to use fresh vegetables and preferably from organic farming.

Vegetable puffs, the ingredients

  • 250 grams of flour 00
  • 6 grams of yeast at room temperature
  • 2 medium firm eggplants
  • 1 red pepper
  • 3 courgettes
  • 200 grams of cherry tomatoes
  • 1 clove of garlic
  • 1 package of bechamel
  • 150 grams of leerdammer
  • Extra virgin olive oil and enough salt

Vegetable puffs, the preparation

  1. Pour the flour on the work surface and form a mountain with a hole in the center then pour in the yeast
  2. A little at a time add warm water gradually and start kneading
  3. Add a pinch of salt and a drizzle of oil while continuing to work the mixture until it becomes a consistent and elastic dough
  4. Let the dough rest for about 30 minutes under a damp cloth
  5. Clean and peel all the vegetables then cut them into cubes
  6. In a non-stick pan, sauté the garlic clove in oil, then add the diced eggplant and pepper.
  7. Cook for about 5 minutes over low heat
  8. As soon as the vegetables have softened, add the zucchini and cherry tomatoes and a little salt, then cook for another five minutes
  9. Once this is done, pour the vegetables into a bowl then add the béchamel and the leerdamer cut into very small cubes and mix
  10. Roll out the dough on a lightly floured surface evenly
  11. Cut long rectangular strips measuring 8 by 12 centimeters
  12. Pour the vegetable filling into the center of each
  13. Use the edges to form rolls
  14. With a knife cut the dough obliquely to create slices with the filling inside
  15. Put the vegetable puff pastries in a non-stick pan in the oven for 15 minutes at 180 degrees
  16. Serve cold or hot to taste
