Brown rice with vegetables

Brown rice with vegetables, ingredients for 4 people

  • 400 g of brown rice
  • 3 courgettes
  • 2 carrots
  • 2 potatoes
  • 1 onion
  • A handful of raisins
  • Extra virgin olive oil, salt to taste

How to wash brown rice
Before trying to cook, wash the rice in water:

  1. dip the brown rice in water and stir to bring out the impurities
  2. then drain the water
  3. repeat this operation several times until the water is clear

Now we can proceed to cooking

Brown rice with vegetables, the preparation

  1. After washing the brown rice, pour it into a pot with the right amount of water and add salt: it must be at least 2 and a half times the volume of the rice; example a glass of rice corresponds to 2 and a half glasses of water
  2. Cook for about 45/50 minutes if the rice is 100% wholemeal
  3. Meanwhile, peel the potatoes and carrots, then cut the first into cubes, the second into julienne
  4. Wash the courgettes and cut them into cubes
  5. Peel the onion and cut it into thin slices
  6. Boil the carrots and potatoes for about 15 minutes then add the zucchini and cook for another 5 minutes
  7. Drain the vegetables and pour them into a non-stick pan with the onion, sauté for a few minutes over medium heat, stirring occasionally
  8. When the rice is cooked, sauté it over high heat with the vegetables then add the raisins
  9. Let it rest over the heat to mix the flavors and make any excess water disappear. Serve with a little raw oil and chopped parsley
