Christmas lunch, first course



It is tradition that the Christmas lunch be richer and more elaborate; there are many dishes that lend themselves well to the occasion. Sure, but what to prepare? For the Christmas lunch, the cannelloni are perfect! But the recipe that we will now illustrate has a variant: it provides crepes instead of the classic pre-cooked cannelloni.

Ingredients for the crepes (6 people)

  • 4 eggs
  • 150 grams of flour
  • 250 ml of milk
  • 50 g of melted butter
  • salt

Ingredients for the filling

  • 500 g of broccoli
  • 3 eggs
  • 300 grams of sausage
  • 1 shallot
  • 50 grams g of grated Parmesan cheese
  • 1 package of bechamel
  • salt

Christmas lunch, preparation of crepes

  1. Take a large enough bowl and beat the eggs in it
  2. Add the melted butter, salt and finally the milk and mix everything well
  3. Gradually add the flour trying to avoid the formation of lumps
  4. Let it rest for an hour

Christmas lunch, preparation of the filling

  1. Boil the broccoli after you have washed them and divided them into florets: 20 minutes are enough
  2. After the time has elapsed, drain the broccoli and set aside
  3. Slice the sausage and put it to brown in a pan without oil for about 5-10 minutes
  4. Fry the chopped shallot together with a drop of water in another pan for 5 minutes.
  5. Put the broccoli in the mixer, the Parmesan, the eggs, the shallot and a pinch of salt: leave some florets for decoration.
  6. After blending the ingredients, pour everything into a bowl
  7. Add the sectioned and well-drained sausage then the b├ęchamel and mix well until you get a homogeneous filling

Christmas lunch, cooking

  1. Take the crepes dough
  2. Heat a non-stick pan for crepes on the stove
  3. Melt a small knob of butter
  4. As soon as it is hot pour in a ladle of batter needed to cover the bottom: the batter should be placed in the center of the pan and then tilting and rotating it, it will need to be distributed over the entire surface.
  5. After a few seconds, turn the batter and let it cook just a few moments
  6. Prepare other crepes until the batter is used up
  7. Here are your crepes ready to be filled with the freshly prepared filling
  8. Deposit a spoonful of the filling on top of each of the crepes and then enclose them just like cannelloni, wrapping them one by one: set aside some of the filling
  9. Grease a baking dish and place your stuffed cannelloni-crepes in it
  10. Cover them with the remaining filling, pour a few flakes of butter and a grated Parmigiano Reggiano over them,
  11. Bake in a preheated oven at 180 degrees for 35 minutes
  12. Garnish the cannelloni with a few broccoli florets set aside and serve
