  • 1 head of organic escarole
  • 5 large organic potatoes
  • 4 organic eggs
  • A handful of green olives
  • A handful of pine nuts
  • 100 grams of grated cheese
  • Extra virgin olive oil, salt and pepper to taste
  • Clove of garlic

Vegetarian patty, the preparation

  1. Wash the escarole with fresh running water, divide it into leaves and let it dry slightly
  2. In a large pot, sauté the oil with a clove of garlic, the olives without the stone and cut the pine nuts into coarse pieces
  3. After a few moments, add the escaroles, add salt and cook over medium heat with a lid, stirring occasionally: when cooked, drain the water and pour everything into a bowl
  4. Meanwhile, peel the potatoes, cut them into round slices of about 3-4 mm and let them boil
  5. Once cooked, add salt and set aside
  6. In a bowl, beat the eggs, add the cheese and pepper, then set aside
  7. Grease the round molds of about 5 cm in diameter with baking paper, then lay a layer of potatoes, stuffed with the escarole then pour in a little beaten egg and finally another layer of potatoes
  8. Sprinkle on top of the breadcrumbs and grated cheese
  9. Bake in a preheated oven at 180 degrees for 20 minutes

Serve the vegetarian pie and garnish with a few flakes of Parmesan cheese and green olives
