Thatin saltis one of the methods of food preservationoldest in the history of man. The foods preserved in salt par excellence are meats such as bacon and raw ham, fish such as dried and salted cod, salted herring, salted anchovies or vegetables such as olives and capers.
Therepreservation of salted foodsit is a winning method because most of the bacteria, fungi and other organisms that are potentially pathogenic for the human organism cannot survive in environments with high saline concentrations. Microorganisms are unable to survive in salty environments due to the hypertonic nature of the salt: any living cell would face death (or deactivation if the organism had this defense mechanism) due to dehydration due to the osmosis process.
In the 19th century, nitrites were added to the salt for food preservation (saltpetre), this compound not only preserves the meat but also preserves the red color. This is a strategy used by the food industry to make food appear fresh even after days, avoiding bacterial decay.
How to preserve salted foods
The salt, once all the moisture has been absorbed, dehydrates the foods and favors their conservation. Topreserve foods in salt, use a glass, wooden or earthenware container (avoid plastic) to place the vegetables or the piece of fresh ham to be preserved in salt.
For each layer of vegetables from to preserve, add a layer of salt. In the bowl you will need to alternately have a layer of vegetables and a thin layer of salt to cover even the last cut of vegetables.
At the time of using the salted foodit will be necessary to first rinse the product in order to wash away the excess salt.
